2016 Colli Etruschi EVO Extra Virgin Olive Oil

This fantastic DOP olive oil from the Lazio region in Italy scored a very high 97/100 in this year's Flos Olei guide. Made from the Caninese olive it contains aromas of artichoke, wild chicory and lettuce enriched by fresh hints of mint and rosemary. Its taste is elegant, smooth and strong with a flavor of wild thistle and a finish of black pepper and almond. Bitterness and pungency is of a medium level and are harmonic.
USES: It would pair well with salmon, legumes, tomatoes stuffed with rice, chanterelle mushrooms, pasta with asparagus, stewed shrimps, mussels au gratin, roast rabbit, goat cheese and baked chicken.
