Easy & delicious this appetizer takes just minutes to make. The trick is to use a super fruity & herbaceous extra virgin olive oil. I like using Domaine Oltremonti for this dish. Start by toasting pieces of good bread. A french baguette works well but any good bread will do. If you can toast the bread on a bbq or over an open flame all the better. While the bread is toasting, mash an avocado or 2 until fairly smooth (figure about 6 -7 pieces per avocado). Top the bread slices with the avocado mixture. Drizzle each piece with olive oil & sprinkle with rock salt to taste. Enjoy!
