This is a wonderful and easy dish that is perfect served along side a fish or meat entree or even tucked inside a fresh crusty roll and drizzled with a little more olive oil!
4 Tbsp of a fairly bold Organic Extra virgin Olive oil (I used Fattoria Ramerino)
A good handful of fresh Basil
Cut the eggplant into 1/2" slices and grill. Chop the basil and mix in a small bowl with black pepper, salt and extra virgin olive oil and then sprinkle the eggplant with mixture. Serve at room temperature.
